Before I share about my weekend, I have a new cooking class uploaded to the class library. September’s theme is “Family Dinners” and the 5 brand new recipes I taught are: Apple Coffee Cake, Corn and Zucchini Rice Bake, Creamy Chicken Florentine, Roasted Fish over Red Lentils, and Warm Brussels Sprout Caesar Salad.
The class is a great way to get inspired for the new school year and as always, I teach lots of techniques and ways to make swaps if you don’t eat animal protein, gluten, dairy, etc. Here’s how you can purchase the single class or a subscription!
Hubs and I enjoyed a fantastic weekend visiting friends in Aspen, Colorado. We had not been in 20 years and we really maximized our time there. We had a very active weekend hiking, biking, walking into town, playing pickleball, golfing (Hubs), farmers market, Jazz Aspen, shopping (Loved Pitkin County Dry Goods) and eating at great restaurants - Meat and Cheese, Clark’s, Saint Ambreous, Cache Cache, Paradise Bakery, drinks at the Caribou Club and Hooch, Spring Cafe, The White House, coffee at The Jerome (look at the paintings ;).
As you know, I love playing games after dinner. My friend introduced us to a fun one - Blank Slate. Really easy rules, fun for all ages, and good with 4 people or a bigger group.
It takes time to get used to the high altitude! Sleep is affected, heart rate and oxygenation are affected. You may get a headache. It’s drier. I focus on staying hydrated and I start my day with an electrolyte powder of some sort. Pique BT Fountain. Hubs swears by these Boost Oxygen canisters.
Even though I love my Lululemon fanny pack, I borrowed this one from my friend that can hold a water bottle. Much better for longer hikes and when you’re in the heat.
I find it helpful while you sleep to use a humidifier. If you stay in a hotel, ask them if they have one.
I brought layers for day to evening, and hats. I brought a simple baseball hat for hiking, but I missed my wide-brimmed visor. For walking around, I wore one similar to this one.
This is a great gadget for attaching your hat to your purse or tote for traveling through the airport.

We love Aspen. Next time you are there, our best friend is chef owner of the restaurant BOSQ. Barclay is an amazing and inspired chef, who works with seasonal ingredients and local farms. I think you’d really appreciate his food. For the altitude - try chlorophyll in your water! Thanks for another great newsletter.
