Happy Monday! Before I get into the good stuff, I wanted to point out how this newsletter works. I post it on a platform called Substack so that it has a place to live. It is totally free, but if you subscribe, it will show up in your inbox when I publish it. You can also look back on previous newsletters and you can leave a comment or question. I receive more emails in response to my newsletter than comments on the thread and I found out that people don’t realize that at the very bottom of the newsletter is a place to comment. Ok, moving on!
I DID use cauliflower bread crumbs instead of panko, but only added 2T yogurt when I saw how mushy the meat was. It was wet and formless right out of the pkg. Brand was Bell and Evans. Maybe I should try another brand!
Used all breast meat chicken…big mistake it was super wet and could not hold together in balls!! Ended up dropping clumps into pan that turned into patties LOL And they were DELICIOUS!!! Next time will try other meat varieties.
Oh dear! But patties work just well. Good pivot! Seems weird that that would happen with all white meat which is less fatty. Hmmm.....You made no other changes?
No, I couldn't find ground chicken so I bought ground turkey. My local store sells both but I think this would work well with all dark meat turkey or chicken.
Wasn’t Jury Duty hilarious?! I love your newsletters, miss your in-home cooking classes, but will take what I can get. I just bought the Scrub Daddy for the grill (hope your husband is ok BTW). Thanks for all the great tips. Off to make meatballs and orzo now!
I am looking forward to trying the new meatballs and orzo recipe! Could you tell me the amount of orzo to use? And a brand of orzo that you might recommend?
Beef was excellent! Thank you for this recipe! I preordered the book when I saw you and your hubs making the dish. Hope it's a good one!
Updating to say, it was a winner! Everyone loved it. Thank you!
Fantastic!!
That sounds good too!

I haven't used cauliflower bread crumbs but I would bet they are not as absorbent as traditional breadcrumbs.

I’ve never seen separate packages of ground white and dark meat. Did you grind your own?
Cannot wait to try this recipe.

Do you think that ground bison could work as a substitute here? I have some and would love to make this for dinner tonight.
Sure! I think ground lamb would work too.
Thank you. I cannot find ground dark meat turkey or chicken in grocery stores.Only at the butcher’s?
Hello, where to find dark meat ground chicken or turkey?
Thank you
I couldn't find it so I used ground turkey instead. But some people told me Gelson's in my area sells it.

Hilarious! Thank you ;)
Love your newsletters. Thank you to your Hubby for the great Father's Day gift ideas.
Bought the cocktail shaker.
Cheers!
BEEF! Holy cow, so intense. Curious, where do you purchase high quality Matcha? And thanks for your newsletter, always inspiring.
Intense! I have a few that I buy and like - Pique, Encha, Mantra, and Matchakari.
Thank you!

Minor detail to leave out LOL. 1 pound of orzo. I used the Whole Foods organic orzo and I thought it was excellent.
