I DID use cauliflower bread crumbs instead of panko, but only added 2T yogurt when I saw how mushy the meat was. It was wet and formless right out of the pkg. Brand was Bell and Evans. Maybe I should try another brand!

I haven't used cauliflower bread crumbs but I would bet they are not as absorbent as traditional breadcrumbs.

Used all breast meat chicken…big mistake it was super wet and could not hold together in balls!! Ended up dropping clumps into pan that turned into patties LOL And they were DELICIOUS!!! Next time will try other meat varieties.

Oh dear! But patties work just well. Good pivot! Seems weird that that would happen with all white meat which is less fatty. Hmmm.....You made no other changes?

No, I couldn't find ground chicken so I bought ground turkey. My local store sells both but I think this would work well with all dark meat turkey or chicken.

I couldn't find it so I used ground turkey instead. But some people told me Gelson's in my area sells it.

Minor detail to leave out LOL. 1 pound of orzo. I used the Whole Foods organic orzo and I thought it was excellent.
