Things On My Radar In March + Salad Dressing With Leftover Hard Boiled Eggs
Happy Monday! If you celebrated Easter, I hope you had a joyous Holy Week and a lovely day. Hubs and I were lucky enough to spend the weekend in Dallas visiting our older daughter.
Did you know that I teach cooking classes? That’s my bread and butter, so to speak! I used to teach in-person, full-time, but I only teach once or twice a month in person now. I have had an online cooking class platform for about 6 years where I film the same class I teach in person, but edit it to about an hour. A new class video with never-before published recipes is uploaded on the first of every month. You guessed it. The April class is up and ready for viewing! April is always my Tex-Mex/Mexican-inspired menu. The recipes I teach in this month’s class are:
Sopa de Fideo
Salad with Beets, Avocado, and Smoky Feta Dressing
Calabacitas
Tex-Mex Meatballs
Healthier Nutter Butter Cookies

Here’s what was on my radar in March
I’ve been following Dr. Lisa Mosconi on Instagram for a couple of years. She is a neuroscientist and I think she is brilliant. Many of you have struggled with or are struggling with perimenopause or menopause. I’m right there with you. I have ordered her new book, Menopause Brain, and I can’t wait to dive in.
If you want to listen to Dr. Mosconi before committing to her book, she has been on every wellness podcast in existence recently, including Mind Body Green, Rich Roll, and Everyday Wellness.
Speaking of podcasts, I enjoyed listening to Layne Norton (aka @biolayne) on Rich Roll’s podcast recently. Monika Blunder is a makeup artist extraordinaire, based in LA, and she has a makeup line! I have to be very selective about cosmetics since I am sensitive to certain chemicals and fragrance. With respect to makeup, I prefer creams and oils versus powders. I’ve been using her Cheek Tint (in Wien) and Lip products (pencil in Renae, crayon in Florence, tint in Fruhling). So beautiful! The Dew Better Face Oil is a little higher price point, but SO GOOD.
This is the best tennis/pickleball top by Lija, my favorite line of tennis apparel. I have it in 3 colors and many of my friends have it too. I have a non-sponsored/non-affiliate discount code for 20% off the Lija site. PamelaXLIJA20
I exercise my body every morning and then I sit down with my matcha and exercise my brain with word games and a puzzle or two. I have a new favorite! It’s called Strands from the NewYork Times.
Hubs and I are watching two shows that we really like:

Today I am sharing an incredible Caesar salad dressing that uses hard boiled eggs BLENDED in the dressing. And I am posting a recipe from Quicker Than Quick which is a deviled egg hack. I explain it all…..
